A Green Tonic

Ingredients 

  • 2 oz/ 50 ml gin 
  • 1 oz/ 25 ml cucumber syrup
  • 1 oz/ 25 ml lime juice 
  • 5 – 7 cucumber slices/ 3 cucumber swirls 
  • Tonic water 
  • Ice
  • Garnish: cucumber slice and 3 lime wheels

Tools 

  • Balloon glass
  • Bar spoon 
  • Jigger

The how to 

  1. In your glass alternatively add ice, cucumber slices and the lime wheels
  2. Pour in the gin, syrup and lime juice
  3. Stir well
  4. Top the glass with your favourite tonic 
  5. Stir again and serve


Green Apple

Ingredients 

  • 2 oz/ 50 ml rum
  • 3 oz/ 75 ml green apple juice 
  • 1 oz/ 25 ml lime juice 
  • Ice
  • Garnish: 3 thin green apple slices tapped in a mix of sugar and cinnamon 

Tools 

  • Shaker
  • Jigger
  • Coupe glass
  • Cocktail strainer
  • Tea strainer


The how to 

  1. In your shaker add ice, rum, lime juice and your green apple juice. 
  2. Shake well
  3. Double strain the mix in your glass over ice
  4. Place the apple slices on top of the ice.


Green wish

Ingredients 

  • 2 oz/ 50 ml whiskey 
  • 2 oz/ 50 ml pineapple juice
  • 1 oz/ 25 ml peach schnapps 
  • 1 oz/ 25 ml lime juice 
  • Splash of blue curacao syrup 
  • Lime soda 
  • Garnish: maraschino cherry & 2 pineapple leaves

Tools 

  • Shaker
  • Cocktail strainer

The how to 

  1. In your shaker add whiskey, pineapple juice, peach schnapps and lime juice
  2. Add ice and shake well 
  3. Double strain the mix over ice in your glass 
  4. Add your blue curacao. 
  5. Top the glass with your favourite lime soda. 
  6. Add the pineapple leaves all the way through in the glass and put the cherry on top.

  • 25 ml coconut rum
  • 50 ml pineapple juice
  • 15 ml lime juice 
  • Ice
  • Garnish: lime wheel

The how to 

In your shaker add the vodka, lime juice, rum, and pineapple juice. Add ice and shake well. Double strain in your glass over ice. Decorate the rim with your lime wheel. 


Watermelon breeze 

Ingredients 

  • 50 ml Absolut Berri Acai Vodka
  • 7-8 watermelon cubes 
  • 25 ml lime juice
  • 5- 6 min leaves
  • Ice: cubes & big rock for serving 
  • Garnish: extra watermelon cubes

The how to 

In your shaker add the lime juice, vodka, watermelon cubes, mint leaves and ice. Shake well. Double strain the mix over your rock in your glass. Add the extra watermelon cubes on top of the ice. 


Purple power 

Ingredients 

  • 50 ml Absolut Berri Acai Vodka
  • Half of a purple dragon fruit 
  • 4 ginger slices
  • 50 ml cranberry juice
  • 25 ml lime juice 
  • Ice
  • Garnish: white dragon fruit wheel

The how to 

In your shaker add the lime juice, vodka, purple dragon fruit cubes and ginger slices. Press them with your muddler. Add the cranberry juice, ice and shake well. Double strain it in your glass over ice and garnish the white dragon fruit wheel on the rim of the glass.

Ingredients 

  • 50 ml Absolut Grapefruit Vodka 
  • Half a kiwi cut in cubes
  • 25 ml lime juice
  • 10 ml simple syrup
  • Ice: cubes & big ice cube for presentation 
  • Garnish: dry grapefruit wheel

The how to 

In your shaker add vodka, kiwi cubes, lime juice, simple syrup and ice. Shake well. Double strain it in your glass over the big ice cube. Garnish by placing the dry grapefruit wheel on top of the ice cube in the middle of the glass. 


Grapefruit fizz

Ingredients 

  • 50 ml Absolut Grapefruit Vodka
  •  1 egg white
  • 15 ml grapefruit syrup
  • 15 ml blood orange syrup
  • 10 ml lime juice 
  • Tonic 
  • Ice
  • No garnish

The how to 

In your shaker add the vodka, egg white, grapefruit syrup, blood orange syrup and lime juice. Shake well with no ice.

Add ice and shake again. Double strain it in your glass with no ice.  Top the glass with tonic. Pour it in through the middle.

  • 50 ml Absolut Grapefruit Vodka 
  • 25 ml cucumber syrup
  • 25 ml lime juice 
  • 5 cucumber slices

The how to 

In your glass add ice to the to, add the vodka cucumber slices, cucumber syrup, lime juice and stir well. Add the tonic and stir again. Garnish with the mint and lime as you see fit.

Ingredients 

  • 50 ml Absolut Pear Vodka 
  • 2 dashes lemon bitters
  • 5-6 mint leaves
  • tonic water
  • ice
  • Garnish: mint leaves and extra lemon slices

The how to 

In your glass add the bitters, vodka, lime juice, stir and top the glass with your water. Add the tonic water to your glass. Stir again.

Garnish with the mint leaves and lemon slice.


Foamy paths 

Ingredients 

  • 50 ml Absolut Pear Vodka
  • 50 ml raspberry liqueur 
  • 25 ml lime 
  • 1 egg white
  • Ice
  • Garnish: dry orange wheel

The how to 

In your shaker add the egg white, vodka, raspberry liqueur, lime juice. Shake well without ice. Add ice and shake again. 

Double strain it in your coupe glass with no ice. Add the dry orange wheel and serve. 


Pear Vodka Martini 

Ingredients 

  • 50 ml Absolut Pear Vodka 
  • 10 ml dry Vermouth 
  • Ice 
  • Garnish: lime peel

The how to 

The elegance in these drinks stays in its simplicity. 

In your mixing glass that is full with ice add your vodka and dry vermouth. Stir well, minimum 30 seconds. Keep in mind the dilution. Strain the mix in your chill, no ice martini glass. Squeeze the lime peel oils on top of the glass and garnish with it.

  • 50 ml fresh grapefruit juice
  • 25 ml lavender syrup
  • 2-3 dashes lavender bitters
  • Favourite tonic water
  • Ice

Team power – your human asset

I want to start with these statements because I see them everywhere in this industry and I think society evolved enough to understand that looks don’t matter! 

There is one reason why waiters are not allowed to let their hair down or wear jewelry and bright makeup or have a beard.  And that is hygiene. You, as a customer, will not want to find in your food a piece of fall out  nail polish, earrings or hair or even on your plate, just hanging there. Regarding make up is mostly about fall out as well and maybe even technique, so just keep it simple.

You, as an owner, should keep in mind this, but don’t be rude or expose your employees in front of your guest. These rules should be presented when hiring a person. Also keep in mind your state rules, it can be that in different countries rules are more permissive. 

Next is a statement that I heard a lot and: “people that are really attractive may not get hired because guests don’t want to see people that are looking better then them”.

O my God this is so much BS on so many levels especially in this time in this society. Also for people that actually thinks like this, ain’t our fault you are insecure as fu*k. First of all, you can get a lot of regulars by having nice looking staff. Treat them like paintings in a museum, you go there to stare at the “nice beautiful works of art” that you don’t understand, at least a cute bartender can talk with you. 

My point is that you should not discriminate by looks or anything for that matter. You should keep in mind the hygiene rules, their willing to work and their involvement. 


Invest!

Yes, this is another statement that a lot of owners and managers are having an allergic reaction to. But it’s easy, if you invest in your team they will give you back. And the “give back “ part for you as an owner means increased revenue. 

Invest in a comfortable uniform. Keep in mind there are cold seasons and warm seasons. Make sure they are comfortable and visually pleasing. You don’t want your employees looking like butchers if they work in a coffee shop.

Invest in training sessions before the season starts. Make sure your team has all the information about products and techniques that your establishment is using and they can present it in a way that will make your customers buy the most expensive item that you have on that menu. 

Invest time. Make sure the mental health of your employees is OK. This is a demanding job, both physically and psychically. Have 15 minutes meeting with the team each month, hear out their ideas and worries. 

Invest your money. Don’t underpay your team just because you think they make tips. Some days are good and some are bad. Don’t rely on the tips and make your team happy. Money makes everybody happy, they are not an exception. If they are coming happy and smiling at customers and giving a good vibe around your customers will spend more money on your location. 

Your employees are as important as your guests.

Yes, I know it’s controversial. A lot of owners are treating their team like something that they can dispose of easily but the truth is that it is hard to keep someone happy and willing to work with a smile and make you money if they are treated like shit. 

In the end it is not that hard. Invest in your team the resources that you invest in your customers like time and money. They will, in the end, make you more money. 

Tips

  1. Have quarterly meetings with all employees. Even if you need to close your establishment for three hours. Get them all together and hear them out, maybe do some constructive exercise to bring them all together. For a lot of employees that are working in this domain, the people at work are as a second family. If they work as one you will feel it in your pocket. In the end they will empower each other. 

  1. Have some surprises for them. Like a coupon for a massage, a bonus for Christmas, a free day for their birthday if they are scheduled to work that day. They will appreciated and you will reward in loyalty and increased revenue.  

  1. Be part of the team and don’t micromanage. If you see something that you would like to be changed, propose the idea, hear them out on why they do it this way and agree to change or not(this can also be a possibility). People are reluctant to change, and if this is enforced the “low trust phenomenon” comes in effect. An unfriendly takeover or rude enforcement, unable to see the other side’s opinion, pushing change without visibility or trust is something that you can’t come out of winning. You might get your way but you will lose the team. 

  1. Don’t work understaffed. It is a stressful environment for all sides. Customers have to wait a long time, the employees will be overworked and the mistakes will be more frequent because of tiredness, you will be angry because of all the bad reviews and the profit that is slowly decreasing. 

  1. The team is also an asset. If you treat it well and take care of it, rewards will come, if not your turnover will be high and profit medium to low.

Apeach Vodka Martini

The how to 

In your glass add ice, vodka, raspberry syrup, lime juice and top the glass with the tonic. Stir well and make sure everything is mixed. Add the mint leaves and extra raspberries. Our shaker add vodka, ginger slices, lime juice and ice. Shake well. 

Double strain it in your glass over ice and garnish with you watermelon triangle and lime wheel.


Tasty Screwdriver 

Ingredients 

  • 50 ml Absolut Raspberry Vodka
  • 75 ml orange juice
  • 25 ml raspberry syrup
  •  Ice
  • Garnish: 1 orange wheels & strawberry

The how to 

In your shaker add the vodka, raspberry syrup, vodka and ice. Shake well.

Pour the mix in your glass over ice. Add the orange wheel in the glass and cut the strawberry in half, not all the way through and place it on the rim of the glass.   


Raspberry Lemon Drop Martini

  • 50 ml Absolut Raspberry Vodka 
  • 10 ml dry Vermouth 
  • 25 ml lemon liqueur
  • Ice 
  • Garnish: lemon peel
