Recycling and sustainability- the past that should’ve been our future

This is the new future and should have been the past as well. But we are not here to bicker about it, we are here to make money out of making the planet healthier, or at least not adding to today’s pollution


ACCORDING TO THE NATIONAL RESTAURANT ASSOCIATION:

65% of restaurant operators have recycling programs in place

60% of consumers prefer restaurants that recycle

51% of diners will even pay more to eat at an eco-friendly restaurant

Today society is changing, new generations prefer to buy and spend money on ethical products and establishments that are known to be sustainable. As a business you need to stay relevant for your guests. 

And here we come again to “Investment”. I know, it’s everywhere. What can you do about it? You need to put in your time and some money, but the reward will be big. You will have a new marketing niche where you can have visibility regarding how eco friendly your business is and this will attract people that weren’t considering coming before.


So let’s start and make some changes !

1. Have an assessment of the current situation

Take into consideration all processes, all products, all objects that you are currently using or making and write down all the waist that is coming out. Divide them in three categories. Reusable, compost and to throw(recycling bins). 

Reusable are the ones that you can have a second product with. You give them a new purpose.

Like fresh fruits that are 1-2 days old and not selling can be the smoothie of the day, ingredients for cake, frozen fruity ice cubes that are fancy in your glass or jam. For this you need to keep in mind the health of the consumers regulations of your country.  Croissants that did not sell that morning can be transformed into the next morning “baked french toast” and so on. Play with ingredients in your menu and do be afraid to add specials. 

Old fancy cups or old liquor bottles can make for tasty decorations. 

So and so forth, creativity is the limit. 

Compost is easy. A bin full of the compost materials that are defined as so in your laws(can be different from country to country). A lot of recycling companies will give you a special bin only for that. BUT if you want to help even more, make a partnership with a local farmer that is in need of some compost. You can give it for free(the nice way to do it) or make a contract that increases your profit(good for the business). 

The waste that can’t be reused in any way must be thrown out. So let me paint the picture of yellow, blue, black and orange bins. Yes, you know what I am talking about. Is the Powerpuff girls with a twist of the recycling world. This is usually set up with a recycling company. 

If you have an open space where guests can discard their trash alone you should be specific about what can go where. Use a tasteful picture, a small list but make sure it is visible, be available if people want to ask questions and make sure your staff is prepared to answer them. 


2. Chance the single use supplies. 

This is where you invest money. Dreadful, but keep in mind, you will end up spending less over time not needing to restock so often. 

To change them entirely is not always available as an optional so at least change them with biodegradable supplies and increase the price of the end product that you are serving. People are willing to spend more money on something that is not harmful for the environment and they will also feel good about it. 


3. Order from local farmers/shops or make it your own

Find companies that are trying to be sustainable and have a recycling program and make a partnership. To have less waste try ordering products that are not in a carton box, wrapped in plastic, and transported in a plastic bag and all of this put in another bigger carton box for security. Pick your vegetables from a local farmer or farmers and have seasonal food. Have your bread delivered from a local bakery straight to your place or even better make your own bread. Go to a spice shop and refill all your jars with the necessary spices on the spot rather than have them come in individual packaging. 

Making products in your own kitchen rather than ordering, can increase your revenue and make you spend less on your supplies. 


4. Transport of the products

Is something that sometimes you can influence and if it stays in your power choose to be eco-friendly and drive electric. Why? Because it is cheaper and attractive to you guests.


5. No headaches 

Make someone else responsible . This way you will have a win-win. No stress about the recycling process and you empower someone else. Make the rules clear and the person in charge is reliable and implicated. Now lean back and enjoy the rewards. 


Tips: 

  1. Have a pick up policy/ delivery for the last hours of the establishment being open. Like this you can sell the soup that you made for the day, pasta that you had left over or make boxes with a little from everything. Instead of throwing them you can sell them for half the price. 

  1. Evaluate your inventory. Make sure that your food doesn’t sit for too long in storage. Store your perishable ingredients properly. Being organized and smart about it can save you a lot of money.

  1. Give to food away. Instead of throwing it at the end of the day give it to you staff or help people in need. Donate it to an orphanage or homeless shelter. Give away ingredients that are quick tot expire and you have no use for.

Sparkling mango 

Ingredients 

  • 50 ml Absolut Mango Vodka 
  • 2 dashes orange bitters 
  • Prosecco
  • Garnish: 1 maraschino cherry

Tools 

  • Flute glass
  • Bar spoon


The how to 

In your glass add the vodka, bitters and top the glass with your prosecco. Stir in the glass. Add the cherry to the glass as garnish.


Dark sunset

Ingredients 

  • 75 ml Absolut Mango Vodka
  • 75 ml cherry nectar 
  • 50 ml mango nectar
  • Ice
  • Garnish: 1 orange wheel 

Tools 

  • Collins glass
  • Bar spoon


The how to 

In your glass add ice. Add the vodka and mango nectar. Stir until well chilled. 

Using the back of your bar spoon pour in the cherry nectar slowly. Garnish the glass with your orange wheel.


Mango Vodka Martini 

Ingredients 

  • 50 ml Absolut Mango Vodka 
  • 10 ml dry Vermouth 
  • Ice 
  • Garnish: lemon peel

Tools 

  • Mixing glass
  • Bar spoon 
  • Cocktail strainer 
  • Martini glass

The how to 

In your mixing glass that is full with ice add your vodka and dry vermouth. Stir well, minimum 30 seconds. Keep in mind the dilution. Strain the mix in your chill, no ice martini glass. Squeeze the lemon oils on top of the glass and garnish with it.

A Banana Party 

Ingredients 

  • 50 ml Absolut Vanilla Vodka 
  • 25 ml liquid cream
  • 25 ml coffee liqueur 
  • 50 ml banana liqueur 
  • Ice: crushed & cubes 
  • Garnish: banana chips

Tools 

  • Cocktail strainer
  • Shaker
  • Tea strainer 
  • Rocks glass

The how to 

Top the glass with your crushed ice. In your shaker add the banana liqueur and liquid cream, add 2-3 ice cubes and shake well. 

Add the vodka and the coffee liqueur to the glass and top the glass with mix from the shaker. 

Garnish with the banana chips and some chocolate shavings if you feel fancy.


Spicy and smooth

Ingredients 

  • 50 ml Absolut Vanilla Vodka
  • 1 chilli pepper (cut) 
  • 15 ml maple syrup 
  • Ice: cubes and big cube for presentation 
  • Garnish: dry chilli pepper

Tools 

  • Shaker
  • Cocktail strainer
  • Tea strainer
  • Rocks glass


The how to 

In your shaker add the vodka, the chilli pepper, maple syrup and the ice. Shake well. 

Double strain the mix in your glass over the big ice cube. 

Garnish with the dry chilli pepper by putting it in the middle on top of the ice cube.


Vanilla Lemon Candy

Ingredients 

  • 50 ml Absolut Vanilla Vodka 
  • 25 ml limoncello 
  • Champagne
  • Ice
  • garnish : lemon peel

Tools 

  • Shaker
  • Tea strainer
  • Cocktail strainer 
  • Bar spoon 
  • Flute

The how to 

In your shaker add the vodka, limoncello and ice. Shake well.

Pour the mix in your glass and top it with the champagne. Use your spoon to stir. Squeeze the lemon peel on top of the glass and drop the lemon peel in.

In your shaker add vodka, ginger slices, lime juice and ice. Shake well. 

Double strain it in your glass over ice and garnish with you watermelon triangle and lime wheel


Watermelon Cosmo 

Ingredients 

  • 75 ml Absolut Watermelon Vodka
  • 25 ml lime juice
  • 50 ml light cranberry juice 
  • Ice
  • Garnish: lemon peel

Tools 

  • Shaker
  • Cocktail strainer
  • Tea strainer 
  • Coupe glass/ martini


The how to 

In your shaker add vodka, lime juice, cranberry juice, ice and shake. 

Double strain it in your glass with no ice. Squeeze the oils from the lemon peel and place it in the glass.


Watermelon Vodka Martini

Ingredients 

  • 50 ml Absolut Watermelon Vodka 
  • 10 ml dry Vermouth 
  • Ice 
  • Garnish: lemon peel

The how to 

In your shaker add vodka, lime juice and ginger syrup. Add ice and shake well. Double strain the mix in your glass over ice. 

Top the glass with ginger beer and give it a stir. 

Garnish with the strawberry fan and add some colour with the mint.


Strawberry- mango delight

Ingredients 

  • 50 ml Absolut Strawberry Juice Vodka
  • 25 ml lime juice
  • 75 ml mango juice 
  • Strawberry flavoured soda 
  • Ice
  • Garnish: strawberry fan, lime wheel

The how to 

In your shaker add vodka, lime juice, mango juice and ice. Shake well. Pour the mix over ice in your glass and top it with your strawberry soda. 

Garnish the glass by placing the lime wheel over ice in your glass and spread the strawberry fan on it. Serve with a straw.

  • 50 ml Absolut Strawberry Juice Vodka 
  • 10 ml dry vermouth   
  • Garnish: Lemon peel 
  • Ice

  • 10 ml lime juice

The how to 

In your shaker add vodka, elderflower liqueur, lime juice and the mint leaves. Add your ice and shake well.

Double strain it in your glass over the big ice cube. Place the lime wheel on top of the glass in the middle of the glass and clip the mint leaves to the rim of the glass.


Pink future

Ingredients 

  • 50 ml Absolut Citron Vodka
  • 25 maraschino syrup
  • Prosecco 
  • Garnish: 1 maraschino cherry

Tools 

  • Flute glass


The how to 

  • First of all, make sure your prosecco is cold. You can also keep the vodka and syrup cold.
  • In your glass add the vodka.
  • Top the glass with prosecco leaving one finger from the rim.
  • Add the maraschino syrup and drop in your cherry.


Fancy juice

Ingredients 

  • 50 ml Absolut Citron Vodka 
  • 25 ml orange liqueur 
  • 25 ml lemon juice 
  • Garnish: 1 rosemary spring

Tools 

  • Shaker
  • Tea strainer

The how to 

In your shaker add the vodka, orange liqueur and lemon juice. Add ice and shake well. 

Pour the liquid in the glass without ice. Add the rosemary spring and serve.

Ingredients 

  • 50 ml Absolut Vodka
  • 5 blackberries
  • 10 ml simple syrup
  • 10 ml lime juice

Tools 

  • Shaker
  • Cocktail strainer

The how to 

In your glass add the 5 blackberries and squeeze them with your muddler. In your shaker add vodka, lime and simple syrup. Add ice and shake well. 

Strain the mix in your glass over ice. Place the lime wheel in the middle of the glass and the 2 extra blackberries on top. 


Sour patch

Ingredients 

  • 50 ml Absolut Vodka
  • 25 ml fresh lime juice
  • 25 ml fresh lemon juice
  • 10 ml simple syrup
  • Ice
  • Garnish: lemon wheel, lime wheel (both cut really thin)

The how to 

In your shaker add the vodka, lime and lemon juice, simple syrup. Add ice and shake well.  

Pour the mix in your glass with no ice and place the lemon and lime wheels in the middle of the glass.

Ingredients 

  • 50 ml Absolut Vodka 
  • 75 ml mango juice
  • 25 ml lime juice
  • 25 ml orange liqueur 
  • Ice
  • Garnish: orange wheel, maraschino cherry

The how to 

In your shaker add the vodka, orange liqueur, mango and lime juice. Add ice and shake well. Double strain the mix in your glass over ice and garnish with the orange wheel and the maraschino cherry.

  • 50 ml pomegranate juice

The how to 

  1. In your blender add ice, tequila, orange liquor, lime juice and the pomegranate juice. 
  2. Blend until it looks like a slushy 
  3. Pour/ scoop the mic in your coupe glass
  4. Use the mint leaves to add a pop of colour

 


Lovers kisses

Ingredients 

  • 50 ml rum
  • 50 ml peach liqueur 
  • 25 ml lime juice
  • 25 ml raspberry syrup 
  • 7 mint leaves
  • Garnish: 3 peach slice, 2 raspberries, bushy mint tip

The how to 

  1. In your shaker add the rum, peach liqueur, lime juice, raspberry syrup, mint leaves and ice
  2. Shake well
  3. Double strain the mic in your glass over ice.
  4. As garnish use the fresh fruits and extra mint leaves 

Floating lust

Ingredients 

  • 50 ml vodka 
  • 25 rose syrup
  • 25 ml lime juice
  • 75 ml rose water 
  • Garnish: red rose petals and pomegranate seeds

  • Tea strainer

The how to 

  1. In your shaker add ice, vodka, rose syrup, lime juice and the rose water.
  2. Shake well
  3. Double strain the mix in your glass with no ice
  4. As garnish drop in the pomegranate seeds and 3-4  red rose petals

A history of Absolut Vodka

A pretty famous drink with a lot of flavours and the power to get you drunk real fast. 

This month is dedicated to Absolut vodka.


Let’s find out more about this drink.

One of their selling points is that they make it with no added sugar and all their ingredients are natural. The main ingredients in Absolut vodka are water and winter wheat.

This drink is produced near Åhus, in southern Sweden. It was established there by  Lars Olsson Smith in 1879 and in 1917 it was sold global wide

In 2008 Pernod Ricard bought Absolut from the Swedish state, and it wasn’t cheap, this transaction cost them €5.63 billion. 

After Smirnoff and Bacardi Absolut is one of the biggest brands that you can find in 126 countries. 

As we know previously, gin was dominating the market for some time and then this other transparent alcoholic liquid appeared. 

In the United States, Absolut became really popular firstly among the creative community.

Bubbly love

Ingredients 

  • 100 ml vodka/gin 
  • pomegranate syrup 
  • lemon/ lime seltzer 
  • Ice
  • Garnish: pomegranate seeds

Tools 

  • Collins glass
  • Jigger 


The how to 

  1. We built this in your glass. 
  2. Add your syrup first. 
  3. Alternatively add ice and pomegranate seeds
  4. Pour in your vodka and top the glass with your seltzer.

 


Good date

Ingredients 

  • 50 ml gin
  • 1 egg white 
  • 50 ml lime juice
  • 50 ml passion fruit syrup
  • Lime soda 
  • Garnish: 2-3 drops raspberry syrup drops

Tools 

  • Collins glass
  • Shaker
  • Cocktail strainer
  • Tea strainer
  • Jigger


The how to 

  1. In your shaker add the gin, egg white, lime juice and passion fruit syrup. Shake well without ice to create a foamy texture. 
  2. After the foamy texture is achieved add ice and shake well again, until chilled.
  3. Double strain the mix in your glass with no ice. 
  4. Slowly top the glass with your lime soda. Make sure to pout through the middle of the glass to create a tunnel. 
  5. Through the tunnel add the 2-3 drops of syrup.

Spicy Marry

Ingredients 

  • 50 ml vodka
  •  3-4 dashes tabasco
  • 1 pinch pepper
  • 1 pinch salt
  • 100 ml tomato juice
  • 25 ml lime juice 
  • 5 – 7 slices red chili pepper
  • Ice 
  • Garnish: 1 red chili pepper & 1 celery stick

Tools 

  • Shaker
  • Jigger 
  • Cocktail strainer
  • Tea strainer
  • 2 Collins glasses

The how to 

  1. In your shaker add the ice, vodka, lime juice, tabasco and the red chili pepper slices. Shake well. 
  2. Double strain the mix in one of the collins glasses and clean your shaker. 
  3. Add the tomato juice in your shaker and pour in the vodka mix. 
  4. Add ice and roll the mix from the shaker to the glass so blend it. 
  5. Double strain the mix in your serving glass over ice. 
  6. Add the celery stick to the glass and the dry pepper next to it close to the rim of the glass.
  7. Sprinkle the salt and pepper on top.
